Zucchini Recipe
Like
others have mentioned on Off Topic, it's
time to think of a million ways to use
zucchinis. My garden has taken off like a
rocket, and my 6 squash plants (2 zucchini,
2 yellow squash, 2 patty pans) are producing
at least 5 squash a day. Here's a
side dish that is fairly healthy and easy.

medium squash like zucchini or yellow squash
sliced in circles about 1/4" - 1/2" thick
5-7 big mushrooms sliced in 4 pieces each
2-4 green onions sliced thin
1 big tomato or 2-3 smaller tomatoes diced
3 cloves garlic smashed in a garlic press
a
little butter and/or olive oil or coconut
oil
Heat
the oil or butter in a fry pan. Add
mushrooms and saute for a few minutes. Add a
little chicken broth or water if they start
sticking to the pan. Then add the zucchini,
green onions, garlic, and tomatoes. Cover on
low-medium heat. Stir every minute or two.
In about 5 - 10 minutes, everything should
be cooked. Take off cover and cook the
liquid down until it thickens, stirring
frequently. Salt and pepper to taste.
(The taste is richer of you put in a blob of
butter, but that cuts down on the healthy
factor).
I'm
making double batches of this and freezing
most of it in serving sizes. The zucchini,
green onions and tomatoes come from my
garden so I feel a lot of satisfaction when
making this.
